These elegantly dressed potatoes are so simple to prepare, but will add a touch of luxury to any special dinner party affair.

Ingredients

  • 8 small round potatoes
  • 500 ml(16 fl oz) fish stock

Method

  1. Peel the potatoes, then neatly slice off one end to enable the potatoes to stand upright. Hollow out the centres using an apple corer, starting from the top but not reaching through to the base. (This cavity will hold the filling.) Neaten the rough edges using a small, sharp knife.
  2. Butter the base of a pan. Add the potatoes and cover with the fish stock. Bring
