There are as many versions of mashed potato as there are cooks. This mash is wonderfully creamy.

Ingredients

  • 4 medium floury potatoes
  • 250 ml (8 fl oz) milk or cream

Method

  1. Peel the potatoes, cut into quarters and place in a large pan of salted water. Bring to the boil, then reduce the heat and simmer for 30–35 minutes, or until tender to the point of a knife.
  2. Heat the milk or cream to boiling point, then remove from the heat and set aside.
