Similar to blinis, these pancakes are delicious served with smoked salmon, caviar, sour cream and chives. For a surprising variation in flavour, add some chopped fresh herbs or bacon with the cream.

Method

  1. Preheat the oven to slow 150°C (300°F/Gas 2). Peel the potatoes and cut into quarters. Place in a large pan of salted water. Bring to the boil, then reduce the heat and simmer for 35 minutes, or until tender to the point of a knife. Drain and rinse in cold water
