Lyon is famous for its gourmet cuisine. Glazed onions and chopped parsley are the distinctive Lyonnais features of this simple sautéed dish.

Ingredients

  • 4 medium potatoes
  • 80 g ( oz) unsalted butter

Method

  1. Peel and trim the potatoes, following the method in the Chef’s techniques for slicing by hand. Discard the trimmings. Thinly slice the potatoes using a sharp knife, or a mandolin set at 2 mm (
