Tarte of Herbs

This is a recipe from John Evelyn’s Acetaria, published in 1699, and at that time all green leafy vegetables were known as herbs. It is an excellent, delicious tart and I recommend it to you even though it’s three centuries old. The combination of sweet and savoury flavours so beloved in the Middle Ages left our tables over the course of the seventeenth and eighteenth centuries, so t
