Trinity burnt cream is a pudding that, according to legend, first appeared in 1617 at Trinity College in Cambridge; however, even the college can’t trace the pudding as far back as 1617. The first recipe for a ‘burnt cream’ – or ‘crème brûlée’, as it is known in France – appeared in the French book Nouveau Cuisinier Royal et Bourgeois (Francoise Massialot) in 1691.
