Cut the top and bottom off the fruit and set it, cut side down, on a cutting board.
Cut away the skin on the sides, slicing from top to bottom, removing all of the white pith and following the natural curved shape of the fruit (Figure 1-1).
Hold the fruit in your hand over a bowl to catch the juice. With a small, sharp paring knife, cut between the inside membranes to remove the segments (Figure 1-2), letting them fall into the dish.
