  1. Cut the top and bottom off the fruit and set it, cut side down, on a cutting board.
  2. Cut away the skin on the sides, slicing from top to bottom, removing all of the white pith and following the natural curved shape of the fruit (Figure 1-1).
  3. Hold the fruit in your hand over a bowl to catch the juice. With a small, sharp paring knife, cut between the inside membranes to remove the segments (Figure 1-2), letting them fall into the dish.
