Crystallizing ginger is rarely done in the professional bakeshop, although it is quite easy and not very time consuming. As with many homemade foodstuffs, which are free from artificial ingredients such as coloring, bleaching, and preservatives, the finished product will not look like the commercial product with which you are familiar. This crystallized ginger has a much darker color than the commercial golden or tan product you buy.
