These great-tasting tidbits are a welcome addition to an assortment of passed hors d’oeuvres at any gathering. Sausage cuts are often referred to as pigs in a blanket, although the term is probably more commonly used for cocktail sausages wrapped in pastry or for small breakfast sausages wrapped in pancakes. If you make the sausage cuts ahead of time, or if you freeze part of the recipe, wait to apply the egg wash until you are ready to bake the pastries.
