Frozen chopped spinach works fine in this recipe. If you use fresh, you will need 2 or 3 bunches, depending on their size. Cook the fresh spinach or thaw frozen spinach, weigh out the amount needed, then squeeze all of the water out and blot it dry with paper towels before adding it to the filling.
