These crackers acquire an excellent and refreshing flavor from the combination of lemon thyme and lemon zest, but you could certainly vary the recipe by using another herb, such as fresh basil or sage. The dough is basically mixed like a pie dough, which makes the finished texture of the crackers short and flaky. For a faster production method, cut into squares or rectangles, instead of rounds, with a multiple-wheel pastry cutter.
