English muffins are a breed apart from the sweet, cupcake-like American muffin traditionally baked in a paper cup. English muffins are flat, barely sweetened yeast-leavened buns, closely resembling crumpets. Both English muffins and crumpets are baked on a griddle on top of the stove within small ring forms, usually about 3 inches (7.5 cm) in diameter. Crumpets are made with a softer dough—almost a batter—that cannot be rolled out and is instead
