Method

  1. Incorporate the egg whites into the almond paste, adding them gradually so you do not create lumps.
  2. Add the nuts, sugar, and orange peel.
  3. If the filling feels too firm to spread (this will usually be the case if it is left overnight, as nuts absorb moisture), add enough additional egg whites to thin it to a spreadable consistency.
