True to my word in the recipe for Berliners, which I describe as “simply a doughnut without the hole,” I am using an only slightly modified version of that dough here. To form the traditional doughnut shape, you will need either a doughnut cutter or two plain cookie cutters, one approximately 3 inches (7.5 cm) in diameter and the other about 1 inch (2.5 cm) for cutting out the holes. Because fried doughnut holes are a favorite of many (especially kids), you may want to fry the cutout holes
