Known as Schüferli in Germany and Switzerland, these pastries are very popular there and are considered a must at Christmastime in Sweden. They are traditionally leavened with baking powder rather than yeast but are even better made with Berliner dough, as they are here. Klenäter are served as part of a cookie or pastry assortment.
