I suspect that these simple but unusual cookies got their name because they have a mysterious hollow center, not because cookie lovers can’t get them out of their thoughts, although this would certainly be easy to understand. I loved to eat these cookies when I was a kid. We would dip them in milk or even water, so that the hollow space would fill up with liquid.
