These are a typical Swedish cookie. I like to include them on cookie trays because their unusual shape contrasts with all of the other round cookies. Another plus is that because they are not shaped individually, they can be produced very quickly. If you do not have ammonium carbonate, use twice as much baking soda instead.

  • 12 ounces (340 g) unsalted butter, at room temperature

  1. Using the dough hook at medium speed, beat the butter and sugar together until well combined. Mix in the dissolved ammonium carbonate and the honey.
  2. Sift the flour and cocoa powder together and blend into the butter mixture. Mix until smooth.
