These easy-to-make, wholesome cookies don’t require any fussy techniques. In fact, you don’t even have to soften and cream the butter; it is actually preferable if a few small lumps of butter remain in the dough. Try using soft Medjool dates, which are available in most grocery and health food stores. You will have to pit them, but their flavor is well worth the extra effort. Lacking Medjool, use any packaged dates that are convenient or, for a change, replace the dates with dried cherries
