This variety of macaroon cookie is convenient if you do not have almond paste on hand. It is a good idea to bake a few test cookies to make sure they spread out properly before rolling all of the dough; they should spread out fairly flat, like chocolate chip cookies. If the cookies do not spread enough, add more egg white; if they spread too thin, add a small amount of flour.
