The Flexipan(s) must be placed on perfectly flat, even sheet pans or, as with anything liquid, the batter will not bake evenly in the forms. If you have 3 Flexipans, you can bake all the cookies in one batch; simply divide the batter evenly among 40 indentations. If you are making one pan at a time, use approximately 1 rounded teaspoon of batter per cookie. Press the batter into the indentations in the pan to flatten it just a little. The glossy, smooth surface of the Flexipan will do the rest of the job of forming the cookies as they bake. The yield is slightly higher using the Flexipans, because you do not have any scrap pieces. You also save the time it takes to cut the cookies round using the traditional method.
