You might say that Oat Flakes are a peasant-style Florentina cookie, with less expensive oats replacing the almonds. They are, however, extremely crisp and delicious, plus they are fairly unusual. The batter can be kept in the refrigerator to be baked off as needed, just as with the Oat Flakes’ more famous cousin. They taste great plain or dipped halfway into dark chocolate.
