These are most often known by their French name, palmiers, which literally translates as “palm trees.” The distinctive shape of the baked cookies resembles the leaves of a palm. It is not documented who first came up with the idea of rolling out puff pastry in sugar and giving it what amounts to a double-double turn in the wrong direction, but research shows the cookies were invented in the beginning of the twentieth century.
