Tuile means “tile” in French; these thin, curved cookies are named after the clay roofing tiles that are made in a half-sphere shape. The same shape cookie is known as tegolino in Italian and teja in Spanish. This style of roofing construction is popular in the Mediterranean, where the curved ceramic tiles are laid on the roof in an alternating up-and-down pattern that locks them into place. Perhaps it is not so strange to name a cookie after a building material when yo
