Ingredients

  • 1 cup (240 ml) apple cider
  • 1 cinnamon stick, broken in half

Method

  1. Place the cider and cinnamon stick pieces in a heavy saucepan. Split the vanilla bean lengthwise. Scrape out the seeds and thoroughly combine with the sugar to break up lumps of the seeds. Add the vanilla sugar and the pod to the cider mixture.
  2. Cook over medium to low heat for 5 minutes, stirring frequently, or until the mixture thickens to a syrupy consistency
