Both of the following pies can be made with Key lime juice or common lime juice with a good outcome, although if you do not use Key limes, don’t call it Key Lime Pie. Whichever you use, the pies will be yellowish in color, not green. Please resist any temptation to add green food coloring, should such a thought occur to you. The zest of Key limes tends to be bitter and should not be used.
