These are gooey and delicious and, like chocolate chip cookies, are especially so right out of the oven, when the chocolate chunks are still runny. Take care not to overbake, or they can go from fabulous to dry and boring.

  1. Line muffin pans with paper cups, skipping every other space because the muffins will mushroom out on top as they bake. Grease the top of the pan around each cup with butter and flour mixture or use pan spray; set aside (see Note).
