Even though this recipe contains no baking soda per se, it does contain a substantial amount of baking powder, and baking powder is one-third baking soda. So this is, technically, still a soda bread.

Ingredients

  • 1 pound 10 ounces (740 g) cake flour
  • 5 oun

Method

  1. Thoroughly combine the cake flour, wheat or oat bran, sugar, baking powder, and salt.
  2. Add the butter in small chunks and rub between your fingers until the butter is reduced to small pieces (about the size of raisins) and is evenly incorporated. Mix in the currants or raisins and the caraway seeds.
