This light and delicate sponge has many uses. Ladyfingers are served as an accompaniment to ice cream and are an integral part of several classic desserts, including tiramisu and gâteau Malakoff. The cookies are soaked in a liqueur or other flavoring before or after they are added to the dessert. Ladyfingers are also used to line the sides of many varieties of charlotte, including Royal and Charente. Ladyfinger sponge batter contains a little more flour in relation to sugar than the usual 5
