This version of Joconde will yield two quite thin (but very elegant-looking) sheets, which means you have very little leverage in spreading out the batter. Care must also be taken when baking the sheets because a hot oven is essential and, as thin as they are, they can become overdone quickly. You will need to watch them carefully while they are in the oven. If you do not mind that the sheets will be a bit thicker, use Joconde Base II, which is a bit easier to work with.
