Ingredients

  • ounces (40 g) cocoa butter
  • 1 pound 5

Method

Cut the cocoa butter and chocolate into small pieces. Place in a bowl set over simmering water. Heat, stirring constantly, just until melted. Do not overheat. Remove from the heat and stir in the corn syrup and simple syrup. Mix until smooth. Follow Step 3 in the main recipe.
