Banana Layer Cake with Maple–Cream Cheese Frosting and Pecans

This cake is a variation that starts with the Banana Bread quick bread recipe and dresses it up with crisp oven-dried banana chips, tangy rich cream cheese frosting infused with maple syrup, and crunchy toasted pecans. While the addition of fruits and vegetables to a cake batter generally helps retain moisture and makes the cakes suitable for longer storage, banana layer cake must be served the same day it is assembled or the sliced bananas between the layers will oxidize and turn dark.
