If you make the apples more than a few days before they will be eaten, you can keep the outside of the marzipan from drying out by coating the apples lightly with hot, melted cocoa butter, using just the tip of a brush. This should be done after applying the red color. The cocoa butter also gives the marzipan a nice satin shine, so it always a good idea to apply it to marzipan decorations.
