This individual version of the cake by the same name will make a refreshing and colorful addition to your pastry display; so many displays tend to be top-heavy with chocolate and/or fondant-glazed pastries. The macaroon paste must be soft enough to stick to the sponge when it is piped on top. However, if the paste is too soft it will change shape when it bakes, creating a less attractive finished pastry. This can also occur if the oven temperature is too low.
