This soft filling can be used as a glaze. The mixture retains a pretty shine for many hours once it is applied, even if the item on which it is used is refrigerated. This feature makes the glaze an excellent choice for cakes or pastries displayed in a refrigerated display case.

Ingredients

  • 6 ounces (170 g) milk chocolate
  • 4 ounces (115

Method

  1. Chop both types of chocolate into small pieces. Place in a mixing bowl and reserve.
  2. Place the cream and the glucose or corn syrup in a saucepan and bring to a boil. Pour over the chopped chocolate and stir until the chocolate is melted. Add the orange liqueur and the butter and continue stirring until the ingredients are incorporated and the mixture is smooth.<
