Ever-elegant swans really make this very simple plated dessert stand out. Courting swans make a good choice when you need a dessert that can be served without a lot of finishing touches, or for a very large party, as they can be assembled hours ahead—and it takes a minimum of time to complete the presentation. Do keep in mind that the swans should be small. If either the head and neck portion or the bodies are piped out too large, or if they are misshapen, you will end up with ugly duckling
