I mentioned to one of my students, who was doing her externship with me and on this particular day was working the pineapple fritters station, that she might need go to the storeroom for more pineapple juice. She indicated that we had plenty, explaining that she had made some from the pineapple skin and core that “you throw out anyway, Chef.” She said this with a slightly guilty look of “sorry for not checking with you first” on her face. Well, shame on me! All this time, I had simply discarded the pineapple skin and core. This young lady, from the island of Trinidad, went on to explain that she had been taught never to waste anything, and besides, it gets very hot where she lives and the pineapple skin makes a refreshing drink.
