I came upon the idea for this dessert as a result of having a leftover sheet of puff pastry dough that had been prepared for cheese straws. I made it into apple turnovers on a whim and thought the combination was great. After a few adjustments to the cheese and the apple filling, this recipe, which has a nice tangy bite, was born. You may want to vary the amount of cheddar, use a different aged cheese, and/or decrease the amount of Parmesan if it is particularly strong or salty. The
