This is one of my desserts that appeared in the original PBS television series “Cooking at the Academy.” For the program, we had planned a flambéed presentation. When the show was filmed, the beehives were the last item I was to prepare in the day’s shoot, and it was to be very simple, or so I thought—until I discovered that there wasn’t any 151-proof rum available; this rum is convenient because it can be ignited cold.
