Raw unsalted cashews are not only quite expensive, they can be difficult to find in the retail market. Often a health food or natural foods store is a good place to look. If you must settle for roasted and salted nuts, blanch and dry them to rid them of the salt, and omit toasting the nuts in Step 1. The distinctive buttery, rich flavor of cashews is delightful in combination with fresh ripe fruits, such as peaches, nectarines, and especially mangoes.
