Cocoa nibs are produced in one of the first stages of chocolate manufacturing. After whole cocoa beans have been roasted, they are crushed, the shells or husks are removed, and the small roasted kernels of cocoa bean that remain are called nibs. Many more steps must be completed to transform these into finished chocolate, but added to ice cream, a cake batter, or a decorating paste, cocoa nibs contribute an intense roasted chocolate flavor and a pleasant crunchy texture.
