If this ice cream will be eaten the same day it is made—and it will be, if it is made as peach ice cream so often is, as part of a backyard barbecue party in the summertime—skip the macerating step. If the peaches are tree-ripened or perfectly ripe, you can omit pureeing them as well. But do include the amaretto if you have some. Peaches and almonds are made for each other. Peach ice cream is great for topping many pies and tarts à la mode, especially those that contain nuts.
