The method used here to dry the kumquat slices may be applied to a variety of other fruits as well. The time required for drying will vary with different varieties. Prepare the fruit as necessary, removing hulls, peel, pits, and cores as appropriate. Cut into slices 1/16-inch (2-mm) thick (cut cherries in half). When using bananas, rub the cut sides with a little lemon juice.
