These wonderfully crisp cookies are very tender because a minimal amount of flour is used in the dough. Although this gives a delightful texture to the baked cookies, it makes the dough difficult to roll out as thinly as required. Therefore, instead of using the conventional method of rolling the dough on the table with flour, the dough is rolled out between two Silpats.
