Method

  1. Place the sugar and lemon juice in a heavy-bottomed saucepan. Cook, stirring constantly, until the sugar reaches the light caramel stage.
  2. Remove the pan from the heat and add the water. Be very careful; the hot caramel might splatter, so stand back. Place the pan back on the stove. Heat, stirring out any lumps, until the caramel is smooth. Let cool.
