Mixing

  1. Beat the eggs, milk, and salt together with the whip attachment until well blended. Add the melted fat.
  2. Replace the whip with the paddle. Mix in the flour until completely smooth.
  3. Strain the batter (optional but gives the popovers a better appearance).
