Procedure
- Dissolve the sugar in the water over high heat and boil the mixture until it reaches 240°F(115°C). ( for information on boiling sugar.)
- While the syrup is boiling, whip the egg yolks (using the whip attachment of the mixing machine) until light and foamy.
- With the machine running, slowly pour the
