Method

  1. Place the ham(s) in a stockpot with enough water to cover. Bring to a boil and reduce heat to a simmer. Simmer 1 hour. Drain.
  2. Cut off skin and excess fat. Leave fat covering about ½ in. (1 cm) thick. Score the fat with a knife.
