Dark red morello cherries (or ‘sour’ cherries) are excellent for cooking as they have a concentrated cherry flavour. They are not easy to find sold fresh, but this recipe also works well with sweet dessert cherries.

Ingredients

  • 3 lemons
  • 1 kg/2 lb 4 oz/

Method

  1. Using a sharp knife or potato peeler, pare the zest from the lemons and then slice the zest very finely. Halve the lemons and squeeze out the juice and pips. Tie the pips in a piece of muslin/cheesecloth.
