You can use whichever variety of plums you have to make this jam. At Bay Tree we use Victoria plums, but golden or damson plums will be delicious, too, although of course the colour will change. Just make sure your plums are very ripe.

  1. Tie the plum stones, cinnamon sticks and cloves in a piece of muslin/cheesecloth.
