Using hard, dried Hunza apricots that come from wild apricot trees in the Hunza valley, Pakistan, creates a jam with an intense, toffee-like flavour. You need to soak the apricots beforehand overnight, but otherwise this is a very simple recipe. This is the jam to serve with warmed croissants in the morning.
